Easy Lactation Cookie Recipe Review MAY 31, 2022 / KELLI NAPOTNIK / Lactation cookies are a wonderful way to treat a nursing mother! I recently made a meal for a friend and decided it was a great opportunity to try a recipe I found. The recipe made a large batch of cookies and used healthy ingredients like organic oats, flaxseed meal and coconut oil that are nourishing for a nursing mother. Give this quick and easy recipe a try next time you find yourself taking a meal to a postpartum mom!
What makes lactation cookies so beneficial for milk supply? I found that oats are high in fiber and have lots of minerals and vitamins that are beneficial to a nursing mother. On the recipe page, which I'll share below, it also says that flaxseed meal contains omega-3 fatty acids which are essential for babies while nursing. When my local grocery store had organic flaxseed meal, I decided to use it instead of using brewer's yeast (which is an ingredient in other recipes and equally as beneficial). If you want, you could probably use both ingredients. I chose to keep my cookies completely dairy free using these semi sweet chocolate chips. You can find them at Target, Walmart and Food Lion!
The recipe I'm happy to share with you comes from the expecting mamas network. Click here to see the full list of ingredients and directions! I love how everything was easy to follow which is why I'm sharing it with you. The directions are as follows:
I noticed the batter felt dry when I was gathering it into balls, but as you roll them they do hold together. The cookies retain most of their shape when they bake, so if you'd like a flatter cookie then I'd recommend patting them down into the shape you'd like. I like how these turned out, so I kept rolling them into balls without pressing them down.
This recipe made close to 48 cookies for me! As a helpful tip, bake half the recipe and save the rest of the batter in a gallon freezer bag and freeze. As an added bonus, take the batter with your cookies so your friend can make a second batch when needed. They were delicious and my entire family gobbled them up. Even though they are labeled for lactation, anyone can enjoy these cookies. The fiber and omega-3's are beneficial to everyone, but especially to nursing mothers who need to increase their caloric intake while breastfeeding.
I hope you enjoy this recipe as much as I did and please let us know if you add your own twist! Have you made lactation cookies before? We'd love to know!
