October is a month that I love! The days are becoming shorter and the evenings more crisp. The dogwood in my backyard has already begun its brilliant change of color, producing deep red hues before the leaves fall for winter. The season itself is a reminder amidst the busyness of life to breathe and slow down.
This past Thursday was a busy day for our family that reminded me how important it is to simplify our dinner routine. My girls had soccer from 3:00-5:00 pm leaving us a small window of time between driving home and our next activity at 7:00 pm. I would like to say that I had planned a crock pot meal that was ready by the time we were home, but I did not. Not wanting to make the same mistake twice, I'm going to be certain to have a one-pot meal ready next week.
I enjoy one-pot meals because they are easy to prepare and often call for simple ingredients. To help you during the busy October season, I'm sharing five delicious one-pot recipes that come together quickly and are fall-inspired!

Crock Pot Roast - Crock pot meals are easy to prepare, make clean up easy afterward, and can help get dinner on the table on a busy weeknight. Our Recipe Section has many tested meal ideas that are delicious and easy to make. I love searching that page when I am at a loss for what to cook. I'm recommending this hearty and comforting pot roast meal because it's full of protein and fiber-rich vegetables. If you have the time to prepare the ingredients in the morning, this meal will be ready as you're walking in the door.
Slow Cooker Chicken Stew - I love the combination of dried seasonings and fresh garlic in this stew. To further save time, I recommend adding a side of artisan-style bread picked up from your local deli and a side salad.

Apple Cider Braised Pork - My aunt recently sent a photo of a beautiful McIntosh apple from her backyard tree. Seeing this reminded me that although the summer garden may be done, fall brings a fresh array of fruits and gourds that provide inspiration for the dinner table. I love the use of apple cider and cut apples in this recipe not only because they tenderize the pork, but they are ingredients that speak to the season.

Sheet-Pan Maple Dijon Sausage and Fall Vegetables - Sheet-pan meals are another way to utilize simple ingredients. This recipe uses turkey sausage (instead of pork), red onions, sweet potatoes, and brussel sprouts. The maple dijon sauce brings the meal together in a flavorful and satisfying way. The recipe notes to go easy on the use of salt, as the sausage already contains most of the salt needed. You can also use broccoli instead of brussel sprouts and butternut squash instead of sweet potatoes.

Slow Cooker Vegetarian Chili with Sweet Potatoes - Chili has always been a welcomed treat in the fall months for me. This meal is easy to prepare, rich in fiber, and can easily be doubled. Store it in the freezer for a busy night or use it as a meal to take to a friend in need. Simply thaw and reheat in the microwave or stovetop when needed! I love mine topped with sour cream and chives!
