Quick and Easy Sports Night Meals
I have the privilege to be a part of a local homeschool co-op. I tell my friends that I benefit more from it than my children do (although they are just as happy to be a part of it) because of the frequent interaction with fellow moms. The moms in our co-op are always full of ideas and encouragement! One of our administrators recently posted on social media asking for dinner ideas for families with children in sports. This was an extremely helpful topic for me because we have been rushing around between practices for two of my sons since the end of April.
Several of the moms shared recipes that are go-to winners for them. Whether you have children in sports and other activities or not, here are some new quick and easy dinner ideas to help on your busy weeknights.

BLTs for dinner - I can't think of any occasion where my family complained about bacon! BLTs are always an easy dinner to put together and everyone enjoys them. One mom chimed in, "My entire family loves it when I make BLT's on game nights." I like to add sliced avocado to mine and serve with a side of soup. If you're in a hurry, canned soup would make things easier. If you have the time, I love making a butternut squash soup to serve alongside our BLTs.

Crockpot BBQ Chicken - The wonderful thing about using your crockpot is that it doesn't heat up your kitchen like your oven would! Double up the recipe to freeze a batch to use the following week.

Mexican Chicken Casserole - This recipe comes together in as little as 30 minutes! Most of the ingredients are common pantry staples making this a recipe that comes together in a pinch.

Slow Cooker Beef Ramen Noodles - Shared from a mom off our co-op page, this recipe jumped out at me because ramen noodles are a comfort food! I love the healthy ingredients and it's full of protein from the ground beef. Good for growing bodies! You just need to add the ramen noodles 30 minutes before serving.
