Three Fresh Farmer's Market Meals to Share
Summer is in full swing and temperatures are hot and cooking! Farmer's markets are open weekly providing ample opportunity to grab in-season fruits and vegetables for your meals. Here are three simple recipes I've found that would be easy to double and take to a friend in need. What makes them a winner for me is they don't take long and won't heat up the kitchen!
The first recipe is a light chicken and peach slaw salad! Buy some local peaches from the farmer's market and use them for this recipe. I love incorporating fruit into my salads for a fresh change. I found this BBQ Chicken with Peach and Feta Slaw recipe at MyRecipes. Simply cook up sliced chicken breast or chicken tenders in your oven or grill, seasoned with salt and pepper. Once fully cooked, toss chicken with the barbeque sauce of your choice. Lastly, toss peaches and coleslaw with vinegar, pepper & salt until coated. Simply serve cooked barbeque chicken over your peace slaw and add feta cheese to garnish. Delicious!
The next recipe is a blackberry and basil salad from CookingLight that also uses grilled chicken.
To start, grill chicken (or brown in an iron skillet) until it's cooked. I season ours with just a little oil, salt and pepper. Nothing fancy or complicated! Next, whisk together oil, vinegar, honey and mustard with a pinch of sea salt and pepper. Toss together over arugula, basil leaves and spring mix of your choosing. Top with grilled chicken, blackberries and goat cheese! I like to add thinly sliced red onions as a garnish as well. If you are taking a salad meal to a friend in need, I have found it helpful to leave the salad in its original packaging from the store to keep it fresh longer. Once dropped off, it can easily be put together on a plate with little or no effort. The recipient can add toppings themselves.
The last recipe by ReadySetEat calls for steak and asparagus. Although asparagus is in season more in the spring and early summer, it can be easily found in most produce sections. Do you grow asparagus in your garden? Did you know it comes back year after year? For this delicious recipe, cook quinoa according to package instructions. Set aside and let cool. Next, sprinkle steak with steak seasoning, or just salt and pepper and cook in your skillet for 2-3 minutes. Add in sliced bell pepper and onion. Cook until soft and slightly browned. Lastly, add asparagus and cook for 3-4 minutes longer. Beef should be tender and asparagus should be hot. Toss quinoa with 2 1/2 tablespoon soy sauce and add steak mixture over top! Easy and definitely a repeat winner in my book!
