Eclair Pudding Cake JULY 22, 2015 / JANELLE PARIS / This recipe is one of Comfy in the Kitchen's best loved. It's not only delicious, it's simple, and a great treat for the Summer heat. If you're making a meal for someone, this is a great desert to send along because it can be made the night before, giving you more time to spend on the main entree. In a medium bowl whisk together pudding and milk. Place in refrigerator for 5 mins until set. Add Cool Whip and fold in... Place graham crackers at the bottom of a 913 dish. Top with pudding mixture. Then repeat those steps one more time. Frost the top like so - it seems like it's going to be a mess, but it turns out! Refrigerate for 4 hours or overnight. It tastes just like an Eclair!
