Taking a Meal During Summer JULY 10, 2018 / ADINA BAILEY / I always look forward to summer because we have a break in the school schedule, but I also tend to forget that it's also fairly busy. Some of the busy is "fun" busy, but our schedule still fills up.
As a result, I like to have some simple "go to" meals that work for our family and to take to friends. As I was cooking for my family this week, I realized there is fantastic meal that you can make for your family or others that requires only 4 ingredients. Yes, that's right! I just had to buy 4 items at the grocery store.
Here was my list:
Boneless chicken thighs Broccoli crowns Watermelon Loaf of bread The only other items I used when making this meal were three items that I always have in my pantry - extra virgin olive oil, salt and pepper.
Grilled Chicken Thighs - When we were first learning to use our grill, we read in a Weber cookbook that chicken on the grill when prepped with olive oil, salt and pepper is simple, yet really tasty. We have enjoyed it that way for several years now. Chicken thighs are an excellent choice for transporting to a friend because they stay very moist if you cover them with aluminum foil after grilling.
Roasted Broccoli Crowns - I washed the broccoli and cut it into bite sized pieces. I drizzled a little olive oil over the broccoli and stirred it to cover all of the pieces. After adding a little salt and pepper, I put it in the oven at 400 degrees for 16 minutes.
Watermelon - a great choice because just a little cutting provides a nice, summery side dish that satisfies the sweet tooth as well. You have plenty of time to cut it up while the broccoli, bread, and chicken are cooking.
Loaf of bread - I bought a loaf of bread that could be reheated at home. This particular bread also baked at 400 degrees for 16 minutes, so I could put it in the oven with the broccoli.
This entire meal took about 20 minutes to prepare and my family loved it! Best of all, plenty of time was left to enjoy the long summer evening!
