Summer Crock Pot Recipes

I love using my crock pot all year round. In the fall, nothing beats a slow, simmering chili enjoyed during an exciting football match-up. In the winter, our bellies are warmed by hearty soups and stews. Easy, make ahead meals are made even easier in the busy springtime.

Even though you might be tempted to store your crock pot away during the summer months, I tend to rely on mine even more when the temperature outside rises. Check out these great recipes that will keep your kitchen cool on a hot summer day and feed a crowd!

Slow Cooker Pork Carnitas
Cooked all day and then quickly broiled, this flavorful pork is a perfect filling for tacos or enchiladas.

Chicken BBQ
I made this for a potluck this weekend and it couldn't have been easier or more delicious!

Stuffed Peppers
Put those peppers from your garden to good use in this filling stuffed pepper recipe.

Butter Chickpeas
If you're cooking for someone who is vegan and/or gluten free this protein packed crock pot meal is a perfect choice.

Corn on the Cob
This seems like a genius way to make perfect corn on the cob for a crowd! And with the butter melted right in who wouldn't enjoy this summery side dish?

Slow Cooker Roast Vegetables
There's nothing I love more than roasted vegetables. And being able to roast them without turning up oven way up? Amazing! Substitute any vegetables you have on hand.

Berry Cobbler
Make this simple dessert in your slow cooker with fresh or frozen berries. Adjust the sweetness based on how ripe your berries are and/or personal preference.
